Champagne for New Year's: Veuve Clicquot
The Champagne house of Veuve Clicquot was founded in 1772. Its extensive holdings, many originally purchased by Madame Clicquot-Ponsardin, stretch throughout the top-rated areas of the Champagne region and are exceptional in size and quality.
Nicole-Barbe Clicquot-Ponsardin was widowed in 1805 at the age of 27. Her husband left her a small country winery which she transformed into a large industrial operation to satisfy the world's thirst for the yellow-labeled bubbly. She personally supervised cellar operations and introduced innovative production techniques, like removing the sediment by “remuage," still used today.
The bottles of Veuve Clicquot Champagne are still aged today in vast vaulted underground cellars carved into the soft limestone rock some 2000 years ago by the Romans.
